Sweet Corn Nutritional Information and Handling

Picking and Storing Sweet Corn

  • When picking your corn straight from the fields, you want to look for a dry brown silk at the tip. Then you want to pinch the tip of the corn to ensure it’s full at the top. Pull your corn off the stalk to harvest, and enjoy!
  • When storing your corn at home, it’s best to keep it cool and humid. Keeping your corn in the husk, stored in the fridge will help you keep it fresher longer.

How to Freeze Sweet Corn

  • Freezing your corn is easy! You want to start by shucking your corn, removing all the husk and silk.
  • Fill a large pot with water and bring it to a roaring boil. Add your corn to the water to blanch for approximately 3-4 minutes, this helps preserve the sweetness.
  • Dip your corn into an ice bath – this will stop it from over cooking.
  • Remove your corn from the cob, you can do this by running a knife along the cob just behind the kernels, or using a corn peeler.
  • Place your kernels on a parchment lined baking sheet in a sinlge layer, then place in the freezer until frozen.
  • Once frozen, put your kernels into a large freezer bag for easy storage.
  • Now you can enjoy your farm fresh sweet corn all year!
