You definitely want to go organic and check for GMO labeling when buying corn or any corn-containing products. Because aside from having other problems, GMO corn doesn’t contain the same level of beneficial vitamins, minerals and antioxidants. Organic corn is a vitamin C and magnesium rich-food and contains certain B vitamins and potassium. It also supplies a good dose of two antioxidants linked to eye and skin health called zeaxanthin and lutein. (source)

Sauteed Corn, Bacon and Green Onions in a large bowl

Cook Time 15 minutes
Course Side Dish
Servings 4 persons

Ingredients
  

  • 4 slices bacon, cut into 1-inch strips I used good quality applewood smoked bacon)
  • 4 cups corn kernels
  • Coarse salt and ground black pepper
  • Pinch of red-pepper flakes
  • 2 to 3 scallions, (green onions) sliced

Instructions
 

  • Cook bacon in a large skillet over medium-high heat, turning occasionally, until browned, 4 to 6 minutes.
  • Add corn kernels; season with salt, pepper, and a pinch of crushed red pepper. Cook, stirring often, until corn is tender, 5 to 8 minutes.
  • Stir in scallions. Serve immediately.
