Pumpkin Granola
Capture the cozy flavors of fall with this crunchy, naturally sweet granola made even better with homemade pumpkin purée from fresh Barrie Hill Farms pie pumpkins.

Method
Roasted Pumpkin
- Halve and seed pumpkin. Roast cut-side down at 350°F for approximately 45 min, until tender. Peel and purée until smooth. Measure out 1 cup for granola recipe. Remaining puree can be frozen for future use.
Mix Granola
- Combine oats, nuts, and coconut.
- In another bowl, whisk pumpkin purée, oil, syrup, salt, and cinnamon.
- Stir wet into dry to coat.
Bake
- Spread in a thin layer onto two baking sheets.
- Bake at 350°F for 15 min, stir, then bake another 15 min.
- Cool completely to crisp.
