Raspberry Clusters
We all love the sweet-tart taste of local raspberries, however keeping them fresh can be difficult. The best option to stretch the local raspberry season and enjoy these little berries for a longer time is freezing them! Next time you go to freeze a batch of raspberries you should try this raspberry cluster recipe. These dark chocolate peanut butter raspberry clusters are a sweet treat that are perfectly portioned and great for sharing.

Method
- Place your Barrie Hill Farms raspberries evenly on a parchment lined baking sheet, ensuring there is space between each berry, and they are not touching.
- Gently flatten each raspberry with a fork to create space for your peanut butter, do not squish.
- Place a small amount of peanut butter on top of each raspberry.
- Place the baking sheet with your peanut butter raspberries in the freezer. Allow to freeze for approximately 45 minutes.
- Place your chocolate chips in a microwave safe bowl. Microwave them in 30 second increments, stirring in between, until chocolate is melted.
- Using a fork, dip your raspberries one at a time into the chocolate, ensuring they are coated. Then place them back on the baking sheet.
- Place the baking sheet with your chocolate covered raspberries back in the freezer for 5-10 minutes until the chocolate has hardened.
- Store them in an airtight container in your freezer. Allow them to sit out to soften a few minutes before you eat them. Enjoy!
