Blueberry Cheesecake Greek Yogurt

These blueberry cheesecake Greek yogurt cups are simple to make, packed with protein, and perfect for keeping in the fridge for an easy grab-and-go breakfast, snack, or healthier sweet treat throughout the week.

Ingredients
  

  • 3 Cups Greek Yogurt
  • 4 Tbsp Ontario Maple Syrup
  • 4 Tsp Vanilla Extract
  • 1 Cup Granola Muskoka Granola works great!
  • 2 Cups Barrie Hill Farms Blueberries
  • 4 Tbsp Barrie Hill Farms Blueberry Honey Regular honey works as well
  • 2 Tsp Lemon Juice
  • 4 Tsp Water

Method
 

  1. In a bowl, mix together the Greek yogurt, maple syrup, and vanilla until smooth and creamy.  
  2. Divide the yogurt mixture evenly into 4 jars or containers.  
  3. Top each with 1/4 cup granola.  
  4. In a small pot over medium heat, combine the blueberries, blueberry honey, lemon juice and water. Simmer until the blueberries begin to break down and the mixture thickens into a jam-like topping. Let cool slightly.  
  5. Spoon the blueberry jam over the yogurt and granola.  
  6. Store in the fridge and enjoy throughout the week for an easy grab-and-go snack or sweet treat.
