Asparagus Stuffed Chicken
Celebrate Spring with this asparagus stuffed chicken recipe! Asparagus is our first crop ready here at Barrie Hill Farms, usually emerging at the beginning of May. Aside from being delicious, asparagus is low in calories and packed with vitamins, minerals and antioxidants. It can make a great addition to omlettes, quiches, soups, scones, salads and more. Take advantage of Ontario’s first taste of spring and try this asparagus stuffed chicken.

Method
- Preheat your oven to 425 degrees. While your oven is preheating, pat your chicken breasts dry, then cut lengthwise creating a pocket in the center. Be sure not to cut the breast all the way through.
- Season the inside of your chicken breasts with lemon zest, salt and pepper. Place one slice of mozzarella, and three asparagus stalks in each chicken breast then fold over to enclose.
- Season outside of the chicken breasts with garlic powder, paprika, salt and pepper.
- Heat a large oven-safe skillet over medium-high heat with olive oil. Sear chicken breasts to achieve a golden-brown exterior, then transfer to oven to finish cooking for approximately 20 minutes.
- Serve with your favourite sides (like grilled asparagus) and enjoy!
