Rhubarb Salsa

A elegant way to enjoy rhubarb that not in a desert. Pair with pork, chicken or nacho chips for a fun festive celebration of one of springs most unique vegetables.

Ingredients
  

  • 2 cups Rhubarb Minced
  • 1 each Jalapeno De seeded and minced
  • 3 each Tomatoes Any variety and fine diced
  • 1 each Small red onion Fine diced
  • 3 each Red, Green & Yellow Peppers De seeded & Fine diced
  • 1/2 cup Cilantro Finley Chopped
  • 2 tbsp Brown Sugar
  • 1/4 cup lime juice fresh is best
  • tt Salt & Cracked Black Pepper
  • 1 clove Fresh Garlic Finley Chopped

Equipment

  • cutting board
  • Sharpe Knife
  • Bowl
  • whisk
  • Spoon

Method
 

  1. In your bowl whisk Lime juice, brown sugar, salt & pepper
  2. Chop all veggies and throw in the bowl
  3. Toss mixture together in the bowl. Cover with saran and let sit in the fridge until ready to use
