Heat a large non-stick skillet over medium heat. Once hot add your almonds, sugar and 1 tbsp of water. Stir often for 3-4 minutes until almonds are toasted. Remove from pan and set aside.
Core your apple, then cut into small cubes. Set aside.
In a small bowl, add your balsamic vinegar, Barrie Hill Farms blueberry jam, honey mustard, 1 tsp water and oil. Whisk to combine and set aside.
Add your spring mix to a large salad bowl, drizzle half your blueberry dressing overtop then toss to coat. Divide your salad between two plates, then top with apples, fresh Barrie Hill Farms blueberries and toasted almonds. Drizzle remaining dressing over top and enjoy!
