Asparagus Tomato Salad With Feta

A delicious and healthy salad featuring freshly picked asparagus and tomatoes topped with feta cheese and a simple dressing that the whole family will enjoy.

Ingredients
  

  • 1 pound asparagus washed and trimmed
  • 5 cups tomatoes grape, cherry, heirloom – your choice
  • 1/2 red onion sliced
  • 1/2 cup feta cheese omit if vegan
  • 1 cup basil leaves slice the larger ones
Dressing
  • 1/2 cup extra-virgin olive oil
  • 2 tsp lemon juice
  • 2 tsp Dijon mustard
  • 1/2 tsp Kosher salt
  • 1/2 tsp pepper

Method
 

  1. Boil asparagus for 2 minutes, drain and rinse in cold water. Pat dry with paper towels.
  2. Combine asparagus with tomatoes, onion, gorgonzola and basil leaves.
  3. Combine dressing ingredients and drizzle over salad.
