Asparagus Frittata

A great dish for breakfast, lunch or dinner using springs most famous veggie

Ingredients
  

  • 2 cups Chopped BHF Asparagus Fresh blanched or frozen
  • 2 cloves Minced Garlic
  • I Med White or Yellow Onion Fine diced
  • 1 Large Sweet Red Pepper Small diced
  • 2 Cups Monterey Jack or Old Cheddar Grated
  • 4 tbsp Butter
  • TT Salt & Pepper
  • 1/2 Cup 1/2 & 1/2 Cream
  • 8 large eggs 12 small

Equipment

  • Chef knife, Cutting Board, Non stick frying pan, Silicone Spatula, Cooking Spray

Method
 

  1. Spray & Melt Butter in non stick fry pan
  2. Once butter is melted and bubbling add a quater of the veggies mixed and cook until lightly softened
  3. Add eggs and season with Salt & Pepper
  4. Cook mixture stirring and lifting the sides to cook evenly
  5. Sprinkle with a quater of the cheese and place under the broiler to melt cheese & finish cooking eggs
  6. Remove from oven and slide onto a plate
  7. Serve with a salad for a healthy light meal
  8. Repeat with rest of mixtures or use a large pan and cut into wedges
