Recipes - Strawberries

Mother-In-Law's Strawberry Pie

Crust:
1 cup all purpose flour
1 tbsp sugar
6 tbsp butter
1 egg yolk
1 tbsp ice water

Filling:
8 oz pkg cream cheese
3 tbsp sour cream
1 1/2 quart fresh strawberries
1 cup sugar
3 tbsp water
3 tbsp cornstarch

Directions:
1. Crust: Mix ingredients well and press into bottom of a spring form pan. Bake in 375 F oven for 15 minutes. Let cool.
2. Filling: Mix cream cheese and sour cream and spread over crust.
3. Wash and hull strawberries.
4. Cover the cream cheese mixture with strawberries- points up.
5. Squash and cook remaining berries with sugar and water.
6. Strain mixture well.
7. Cook strained juice with cornstarch, stirring constantly until clear and thickened.
8. Spread over berries and refrigerate.

Strawberry Tossed Salad

½ cup vegetable oil
1/3 cup sugar
1/4 cup red wine vinegar
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon paprika
pinch pepper
12 cups soft leaf lettuce (butter lettuce, green or red leaf lettuce)
2 ½ cups sliced fresh strawberries
1 cup (4 oz) shredded Monterey Jack cheese (or fiesta mix pre-shredded cheese)
½ cup chopped walnuts, toasted. (optional)

Directions:
Combine first 7 ingredients in a jar with a tight fitting lid; shake well.
Just before serving, toss the salad greens, strawberries, cheese and walnuts in a large salad bowl.
Drizzle with dressing and toss.

Strawberry-Rhubarb Puff

3 cups cut-up rhubarb
1pt. strawberries, cut up
1 1/2 to 2 cups sugar
1/2 cup water
2 cups all purpose flour
3 tsp. baking powder
1 tsp. salt
2 tbsp. sugar
1/3 cup vegetable oil
2/3 cup milk

Directions:
Heat oven to 450 degrees (hot)
Mix rhubarb, strawberries, sugar and water in 9"square pan.
Cook 5 minutes in oven.
Mix flour, baking powder, salt and 2 tbsp. sugar.
Stir in oil and milk only until dry ingredients are moistened.
Drop by spoonfuls onto hot fruit, making 9 biscuits.
Make a hole in top of each biscuit and put a little butter, sugar and cinnamon in each.
Bake 20-25 minutes.
Serve warm with cream, whipped cream, or ice cream.
9 servings.

Strawberry Surprise

1/3 cup Balsamic Vinegar
1/3 cup Barrie Hill Farms Maple Syrup

In a small saucepan over low heat, reduce this to a light syrup.

3 cups cleaned, chopped Barrie Hill Farms strawberries
1/3 cup sugar

Boil berries & sugar 6-8 minutes. Cool. Puree.

In tall wine/dessert glasses place some sliced strawberries. Drizzle the syrup over these berries. Place a scoop of vanilla ice cream on top. Spoon some strawberry puree on ice cream. Top with whipped cream and sliced berries.
