Fresh Green Beans and Potatoes
Serves 8
8 slices of bacon cut into 1/2 inch pieces
4 pounds green beans, trimmed and snapped or cut into bite-sized pieces
2 large onions (optional), cut into quarters
3 cups of water (approximately)
10-12 small new potatoes, scrubbed and halved
1/2 tsp salt
1/4 tsp black pepper
Directions:
1. In a large pot, cook the bacon to render the fat, and then remove the bacon to paper towel to drain. Or, if you have bacon fat saved, heat a 1/2 cup until sizzling. Or use 1/4 cup bacon fat and 1/4 cup vegetable oil.
2. Stir in the green beans and the onions, if using, and cook until beans have absorbed some fat and turned bright green. Then add enough water to come within 1 inch of the top of the beans. cover and cook over low heat until almost done, about 1 hr.
3. Add the potatoes, salt, pepper and more water if necessary. Cook until the potatoes are done, about 15 min. If you want you can scatter the bacon pieces over the top to serve.
