Blueberry Sauce
Wonderful on pancakes, yogurt, ice cream, waffles.
2 cups blueberries
1/4 - 1/2 cup honey
1/4 cup water
1 tsp lemon juice
pinch of cinnamon or ground allspice
1 cup additional blueberries (optional)
Directions:
1. Place all ingredients in a heavy sauce pan.
2. Stir and cook over low heat until blueberries are tender.
3. Cool slightly. Puree in a blender until sauce is very smooth. Store in refrigerator.
4. One additional cup of blueberries may be added before serving. Serve at room temperature or warm.
